3 Recipes for Easy + Delicious LUNCH
for all of you beleaguered—yet resilient!—lunch makers out there
Hi friends,
Since lunch is a daily challenge that a single newsletter could never hope to solve (check out part one here), we’re back with more ideas for tasty and wholesome lunches that are packable, portable and (hopefully) enjoyable by eaters of all ages.
Our objective here, as always, is to make nutritionally dense meals (or parts thereof) that still leave room for lots of flavor. As you have no doubt noticed, we like to include things like herbs, garlic, spices, seeds, and citrus because a) they make everything more delicious, and b) will ideally set our kids up to enjoy the food that we love to cook and eat. It’s certainly worth a shot.
With that, we give you:
Farro + Black-eyed Pea Salad
Soba Noodles with Ground Sesame Dressing
Insanely Good Savory Veggie Muffins
They’re all easy to make, easy to pack, and very, very tasty when enjoyed at room temperature. Here’s an insane idea: why not make enough for you to take for lunch, too?
We’re also in the throes of experimenting with to–go lunch containers and have—so far—liked these stainless steel numbers (and these as well). If anyone out there is passionate about any containers that they’ve found, let us know! We’ve heard great things about this multi-compartment PlanetBox lunch box, for what it’s worth…
