A Cozy Farro-Lentil Bake For Not-Thanksgiving
A simple dinner for the day before or the day after (plus: our GIFT GUIDE!)

Coming at you this holiday week with our second annual recipe for not-Thanksgiving—because despite all of the travel, fuss and schlepping, Thursday’s dinner is not, in fact, the only meal you have to figure out this week. Last year, we espoused the great many virtues of roasting a whole kabocha squash, but this year we’ve got a cozy farro-lentil bake (casserole?) for you. Packed with grains, beans, and vegetables, it’s a kind of minestrone soup/shepherd’s pie/baked risotto hybrid that will easily feed a hungry crowd without requiring much time, vigilance or any special ingredients. Plus, we threw in a Green Spoon gift guide to assist in your inevitable Black Friday journeys. (It’s not you, it’s late-stage capitalism.)

This farro-lentil bake is reminiscent of a lot of things, but in a nice way. It feels cozy and nostalgic without being bland, and it requires just a handful of common ingredients. It would even make a good vegan and bread-free alternative to stuffing, if desired. And it would be a great filling (with some of the seasonings adjusted, perhaps) for a veggie or vegan burrito.
