Hi friends,
Yep. You read that right. *Breakfast Cookies* With a subject line like that, how much can we really say before delving into the recipe? We feel pretty confident that you have an intrinsic understanding of the primary use cases for these cookies:
Your morning is frantic and you need to get out the door pronto, but your kid is unbreakfasted and teetering on the edge of a hanger-induced meltdown.
You didn’t have a particularly frantic morning—in fact, you made a really nice breakfast! Maybe even pancakes! And yet, for some reason, your kid has refused to eat them and you’ve gotta get something in that stomach.
There’s a situation at some point in the day and you need to throw a cookie at it, without risking the fall-out that attends a traditional cookie.
Etcetera, etcetera, etcetera. These are cookies. They’re chewy and tasty and texture-y, they look like cookies and they taste like (not-too-sweet) cookies—but they’re made without refined sugar and are loaded with whole grain oats, nuts and dried fruit that make them a legitimate, zero-hesitation breakfast or snack. Make a batch and watch them do their magic: they’ll be solving problems in no time.
