As promised, today’s post is an ode to the humble cauliflower, in all of its flavor-flexible, good-bang-for-your-buck, texturally-interesting glory. (It’s also decidedly not green in case that would be an effective selling point for any of your family members.)
Below you’ll find three recipes: one for very new eaters (Laila Gohar’s creamy bay-scented cauliflower purée) and the other two for more seasoned chewers (cauliflower steaks with salsa verde and a zingy shaved cauliflower salad). Beyond that, we’ve included a round-up of our favorite cauliflower recipes from cooks who also celebrate this beloved brassica. Let us know if we’re missing any of your favorites—we’ll add ‘em!
