Hi friends,
The premise of this week’s email is so universal that it hardly needs introduction: how to get something healthy and delicious on your kid’s plate in next to no time. This week’s recipes are for dinners (or lunches, or breakfasts—why the heck not?) that can be made in 10 minutes, or 5 minutes, or less. Because, yes, dinner still needs to happen on those nights when you have neither the time, nor the sufficient will for anything more. (Note: these are recipes for when you don’t have any helpful leftovers lying around to supplement.)
In the sub-10 minute category, we’ve got Pizza Beans on Toast, Umami Oats with a Fried Egg, and Two Bean + Pumpkin Tacos! And coming in at less than 5 minutes: Yuba Pesto “Pasta,” a Dukkah Cottage Cheese Bowl and a perfect little Antipasti Plate (aka Snacks for Dinner). We also sourced a bunch of ideas for < 10 minute meals from friends we love, trust and regularly turn to for inspiration in times of desperation. Community saves, people!
To help you make these meals fast, we’ll be posting a handy list on Instagram (@greenspoonweekly) today for stocking your pantry and fridge so that these meals are always close at hand.
Ready, set, go!
