Hi Friends,

One of the requests we get most often is for dinner recipes that are actually doable when you’re strapped for time, energy and ingredients. In the past, we’ve shared 10-minute dinners for those nights when it’s a race against the clock (check out this post). And while time is often the biggest factor, sometimes it’s just a question of technique, i.e., how to make something taste really good with just one or two ingredients and a minimum of fuss. Our personal weekly menus include at least two of this week’s recipes exactly as we’ll detail below.

These are the straightforward, foolproof techniques that require very little active cooking or expertise and yet yield the most delicious versions of chicken/salmon/tofu that we know of—versions the whole family will happily devour.

  1. Crispy Chicken Thighs

  2. Not-That-Slow Slow-Baked Salmon

  3. Fried Sweet + Savory Tofu

These are not complicated things to make, but technique counts for everything when the ingredients are pared down. Each of these require little more than salt and olive oil and 5 minutes (or less) of active time. They might take a tiny bit of planning (to allow for defrosting, pre-salting, draining, etc.) but the results more than make up for any required premeditation. Give them a shot—you’ll be making these from memory in no time.
