Whenever we’re asked what meals we make for dinner when we’re short on time, the answer is invariably “pasta.” It’s probably your answer, too, right? And why shouldn’t it be? Pasta’s what we know, pasta’s easy, pasta’s delicious, and most importantly: pasta is quick.
As we see it, there are three main buckets of at-home pasta recipes: there are the gorgeous pastas that require technique, special ingredients and/or attention, there are the maximum comfort pastas (the butter and Parmesans, the jars of Rao’s) and then there are these: the from-scratch sauces that you can start and finish in the same amount of time as it takes to cook the pasta. A full, satisfying meal in 25 minutes or less.
With a bit more effort than buttered noodles—but not more time—these two pastas from our near-weekly rotations are consistent winners with our toddlers, at least for the time being, and they’re definitely winners with us. We that, we give you:
