Mornings, man.

One thing that we have both heard—and felt!—time and time again is how challenging mornings are. (This is a nice way of putting it.) There are a million things to do, and they all need to be done at more or less the exact same moment: make coffee, make breakfast, but not just breakfast, a breakfast that will be eaten, otherwise you will find yourself making multiple breakfasts, and accidentally beginning your day as a short order cook. Perhaps you also have a lunch or two to make? And maybe some snacks for later too? Have pets? Well, the joke’s on you because they too must eat breakfast. And then don’t forget clothes and tooth-brushing, and on and on and on. You know the drill.

Unfortunately, we can’t solve most of those problems, but we’re going to try our best to help with the breakfast piece. As such, our offering today is not one but two breakfasts you can make ahead: Banana Squash Muffins (or “Breakfast Cupcakes,” depending whose side you’re on) and Orange-y Overnight Oats!1 Spend a few minutes making these the night before and come morning, all you have to do is serve and sip your coffee leisurely as your children devour every last bite like angels. This will obviously not happen, but hopefully having these recipes in rotation will make at least a handful of your mornings slightly less frantic.
